We use cold-brewed Bergamia Jasmine Green Tea, known for its high levels of catechins – powerful antioxidants linked to better metabolism, improved mood, and lower inflammation. Cold-steeping preserves its delicate compounds and reduces bitterness, making it gentler on your system.


Lower Alcohol, Naturally

Unlike traditional cocktails, this drink is:

Solstice Bloom – Green Tea Spritz Cocktail

Equipment

  • Ice Cube Tray
  • Cocktail Sticks
  • Champagne Flume

Materials

  • 1 bottle 2007 High Clandon Cuvee or a Cremant de Loire / Cremant d’Alsace, Brut/Extra Brut
  • 500 ml Highland Spring Mineral Water
  • 3 g Bergamia Jasmine Green Tea Loose Leaf
  • Cucumber thinly peeled ribbons
  • Candy Floss Grapes halved
  • Fresh Mint sprig

Instructions

Cold-Brew the Green Tea

  • Steep 3g of loose-leaf jasmine green tea in 500ml of Highland Spring Mineral Water at room temperature for 24 hours.
  • Taste every 4 hours until the flavour is just right, then strain and refrigerate.
  • Top Tip: Make it slightly stronger than usual – freezing mutes the flavour a little.
  • Freeze into Ice Cubes
  • Pour the tea into a round ice cube tray and freeze overnight.

Make the Garnish

  • Ribbon your cucumber (with peel on the sides), halve your grapes, and thread them onto a cocktail stick with a sprig of mint.

Assemble your Spritz

  • Place your green tea ice cubes in a flute.
  • Add the cocktail stick garnish.
  • Slowly top with chilled High Clandon Cuvee (or an alternative — see below).
  • Sip Slowly. Feel Lovely.
  • It starts strong and sparkly, then softens as the ice melts — evolving with every sip.

Notes

Fizz Alternatives (If You Can’t Find High Clandon)

Look for a Cremant de Loire or Cremant d’Alsace – Brut or Extra Brut.
Opt for one made with Chenin Blanc or Pinot Blanc.
